Hard Cider records must be separately maintained as a fruit wine in the hard cider tax class. If you also produce beer, you’ll need a separate file folder or binder for each beverage.

When must the records be filled out?

  • At the time the operation takes place if handwritten; 3 days to enter handwritten notes into the computer.

How long do they have to be kept?

  • 3 years

Where must they be kept?

  • At premises is best. Cloud storage and internet based software will give you access anywhere there is an internet connection.

Failure to maintain records is the number one violation found by the TTB. Avoid fines and penalties with a habit of recording your daily operations. You’ll welcome audits because they are pain-free and get you compliments for accuracy and completeness.
